This walking tour for food lovers has the beautiful green and hilly Umbria as a backdrop. It is a perfect combination of walking in panoramic landscapes, exploring around culturally interesting towns and most important of all enjoying the excellent wines and gastronomic traditions of this lovely region. Taste delicacies as black truffle, salami and raw prosciutto of Norcia, wild boar salami, different pecorino cheeses, porcini mushrooms, Castelluccio lentils, red onions from Cannara and certainly try the streetfood sandwich with porchetta (spicy pork).

Umbria has also excellent olive oils and wines.  The spicy and deep green Umbrian extra virgin olive oil, is produced throughout the region which boasts 5 zones of the Umbria Dop. We only name some of the famous Umbrian wines, like white wines of Orvieto, the red Montefalco Sagrantino wines, the Torgiano rosso riserva and the Grechetto, a typical Umbrian wine, with a pleasant herbal taste.

This tour starts in Assisi, a lovely medieval town, built on the slopes of Mount Subasio. Assisi is a charming town offering tourists a wealth of tranquillity and a lot to see. Take the time to explore the town on foot and with the help of our cultural route you will find yourself walking by many impressive medieval monuments, town palaces, shops, and fountains, such as the Fonte Oliviera. Leaving Assisi you will walk to SPELLO, but before reaching this exquisite town, you will make a stop at a winery to taste some wines of the Assisi d.o.c. area. The tour finishes in Spoleto built on a hillside with most of the sites in the compact upper town offering a wonderful mix of treasures from Roman, Medieval and Renaissance times. You will have a cooking class and can make a nice walk through the sacred woods of Monteluco

Arrival at your **** hotel in the old town centre of Assisi. In the evening you have a dinner in Michelin restaurant Il Frantoio, where you will tastes some recipes of chef Lorenzo Cantoni, The Miglior Chef dell’Olio AIRO 2021 (best Olive Oil chef AIRO).

This exciting town walk will take you around the most important cultural monuments of Assisi, connected with the lives of the saints Francis and Clare, who were born and died in Assisi. From the hotel, your walk goes up to the Porta Cappuccini town gate (470m a.s.l.) and. from here you will walk through a tangle of little alleys and crossing cheerful medieval squares. Past the medieval castle (506m a.s.l.), the St. Francis-basilica, the temple of Minerva, the Chiesa Nuova, and the St. Clare-basilica your cross the town, and finally your tour of Assisi ends at the monastery of St. Damiano (310m a.s.l.).

At 17.15 you are pick-up at the hotel by taxi and brought to the winery Saio You have a short walk through the vineyards and a wine-tasting of 4 Saio wines combined with bruschetta to taste the Saio extra virgin olive oil, pecorino cheese, caciotta with truffle, cold cuts and torta al testo. After the tasting you are brought back to your hotel.

Today’s walk follows the gentle slopes of Monte Subasio, guiding you through one of the most peaceful and scenic corners of the Umbrian countryside. The route unfolds among ancient olive groves, terraced hillsides, and fragrant Mediterranean scrub, offering uninterrupted views across the Valle Umbra, one of central Italy’s most harmonious and biodiverse valleys. As you continue toward Spello, the landscape gradually opens into vineyards, cypress-lined paths, and silvery orchards that have shaped local rural life for centuries.

Set on a rocky spur of Monte Subasio, Spello is one of Umbria’s most captivating hilltop towns. Its remarkably preserved Roman and medieval walls embrace a compact historical centre rich in traditional stone houses, flower-filled alleys, and graceful archways. Wandering through the town’s narrow streets, you will find visible traces of its Roman heritage—ancient gates, inscriptions, and fragments of classical architecture seamlessly integrated into the urban fabric.

Spello also hosts one of the region’s most extraordinary artistic treasures: the Pinturicchio frescoes in the Cappella Baglioni of Santa Maria Maggiore. Today a nice ring route in the surrounding of Spello. Through olive groves and woods, you will walk along the Roman aqueduct to Collepino, a small walled-in mountain village. From here, you have a short climb and then along quiet trails and dirt roads of Monte Subasio, you come back to Spello.  The vegetation of the slopes of the Subasio is varied with olive groves, broom, Turkey oak, minor oak, hornbeam, flowering ash, maple, beech and ilex. The aqueduct-path winds its way through charming scenery composed of the crop fields of the valley, olive groves and Mediterranean woodland. You will have stunning views of Spello and the surrounding hills.

After breakfast, you say goodbye to Spello and take the train to Spoleto, one of the most elegant and historic hilltowns in Umbria. Your morning is free to explore Spoleto at your own pace—a town renowned for its rich blend of art, architecture and medieval charm. Wander through narrow streets, enjoy panoramic viewpoints, and soak in the atmosphere of one of central Italy’s most captivating destinations.

A visit to the Duomo of Spoleto is a must. Reached by a gently descending stairway, the cathedral houses extraordinary Renaissance frescoes by Filippo Lippi and Pinturicchio. Spoleto offers much more to discover: the ancient Roman House with its mosaics, the early Christian San Salvatore church (a UNESCO site), the Romanesque San Ponziano, and the impressive Rocca Albornoziana overlooking the town. Other highlights include the iconic Ponte delle Torri, the slender Torre dell’Olio, the Roman Theatre, and the excellent Archaeological Museum.

In the afternoon, you will join a hands-on Umbrian cooking class in your four-star hotel. Guided by a local chef, you’ll prepare a traditional antipasto and a homemade primo using fresh regional ingredients. During dinner, you’ll enjoy the dishes you created—an authentic, memorable culinary experience in Umbria.

Your final walking day begins at the iconic Ponte delle Torri, the spectacular bridge-aqueduct that opens the way to Monteluco, one of Umbria’s most spiritual landscapes. The name “Monteluco” comes from lucus, meaning “sacred woods,” a reflection of the deep reverence this mountain has inspired since antiquity. As you climb the peaceful forested slopes, you follow ancient paths once walked by hermits, monks, and pilgrims who came here in search of silence and reflection.

By the 5th century, the hermit Isaac of Antioch had established a solitary life here under the Benedictine rule. Centuries later, the Franciscans founded a monastery that still preserves a profound sense of tranquility. Monteluco’s dense woodland—rich with evergreen oaks, Mediterranean undergrowth, and rare plant species—has always been vital to Spoleto. Its ecological value was recognised early: the forest was already protected during Roman times and again in the Middle Ages, making it one of Italy’s earliest preserved natural areas.

As you continue along the trail, soak up the stillness of the sacred forest. Wildlife such as porcupines, wildcats, badgers, squirrels, and numerous bird species thrive among these ancient trees. With sweeping views across the Umbrian valley and a deeply atmospheric landscape, your walk on Monteluco offers a serene and memorable conclusion to your journey through Umbria.

Moderate with the possibility of making some more strenuous walks. You walk in the hilly countryside without not too much climbing and descending. There is time to visit the medieval towns along the route. The duration of the walks is between 4 and 6 hours a day; 12 km with an average walking time of 3-4 km an hour. There is some walking experience needed.
